The good Lord put the pig on Earth for one reason in my opinion, and that was to be smoked and slathered with delicious BBQ sauce. There are lots of places in these great United States to obtain such delicious food. Texas, Caroline, Memphis to name a few. Utah isn’t necessarily known as one of the great barbecue states. Luckily for us however, folks like Sarah and JR Epperson have brought great barbecue to the Beehive state. So the choice is yours, either drive the 1,523 miles to Memphis, or you can just drive to American Fork and go to Pig City BBQ.
At Pig City BBQ (pigcityutah.com), they are proud of their Memphis roots and heritage. You can order all sorts of fantastic pork creations from baked potatoes with pulled pork, to BBQ nachos, to ribs. They also have a menu full of Southern style sandwiches, as well as beef brisket, turkey breast, sausage, and chicken.
There is a lot to love about Pig City. For starters, take their sauce selection. Just 3 different sauces to choose from which is a big plus in my book. You have your hot, your sweet, and your vinegar based they call “Crisp Apple Cider Sauce”. Each one of them was unique and tasted good on all of the dishes I tried.
These BBQ nachos is featured in the appetizer section of the menu, but they are an absolute must try. They don’t just dump some plain out-of-a-bag tortilla chips and throw some nacho cheese and meat on top of them. No, they really apply a nice gourmet touch to these nachos. They fry up their own tri colored corn chips as a base, and really mix up well a base of sharp cheddar cheese and brown sugar based beans throughout the nachos. This helps to keep each bite of the nachos well coated and garnished. They also don’t cut you short on the pulled pork. It’s everywhere, and topped with jalapeno and sour cream.
I’m from Idaho and trust me, the don’t make potatoes like these up there. Fusing flavors and cooking techniques is my favorite. These are delicious spuds topped with their trademark pulled pork, cheese, and sour cream.
Don’t underestimate the fries from this basket. They are crispy and very tasty. The ribs are done baby back style. They are generally larger and meatier than their fall off the St. Louis style counterparts. These are sauced up just right. The slaw had a hint of horseradish which was a nice touch. In talking with Sarah, I could tell she was really proud of her ribs, she started to tell me a bit about their smoking and bathing process but had to stop. There are certain secrets that just can’t be shared, only great tasting ribs.
There aren’t a lot of true sit down table service BBQ places in Utah. Most are quick service type approaches. Nothing wrong with that approach, but Pig City does offer full table service which is a nice touch for groups that want to just come in, relax, and enjoy some great tasting food. Finally, just because this is a Memphis place, it doesn’t mean they don’t offer some delicious brisket. Be sure to check out their brisket sandwich options where they thin slice the meat instead of thick slicing it. Makes for a great sandwich!
