I love pretty much everything about food trucks.  I like how they offer comfort food from around the globe, and usually focus in on just a few great menu items that they know how to do really well.  It takes a lot of the guess-work of searching through a menu to find the true speciality of the house.  Kitchen Eighty Eight while a food truck, however breaks the mold slightly.  Just read the description of the first item on the menu.  Tri-tip Steak:  With mashed potatoes and sugar snap peas.  The description, presentation, and ultimately taste of this food truck fare is anything but normal and quick.  It was excellent and tasted like something out of a 5 star restaurant.

With their offering of three different types of meats, I went with the chimichurri sauce on top of my tri-tip steak.  It was cooked to perfection, and tasted really good.  The chimichurri sauce went really well with the mashed potatoes and steak.  For a cold Spring Utah day, it was the perfect dish.

Grilled Chicken on a Bun

My colleague ordered the grilled chicken on a bun with the BBQ sauce.  He made it a point to message me later, and was happy to report that it too was really good.

Finally some sweet potato fries and fry sauce completed the lunch.  Kitchen Eighty Eight is a definite hit, and must visit.  If you are going to come at me with a menu with a bunch of fancy ingredients, words, and flavors…. you better wow me.  Mission accomplished.  The food was as pleasing to the palette as it was to the eye.
