The horses are out of the stables, the cat is out of the bag, the toothpaste is out of the tube… doesn’t really matter how you state it.  This little food truck with the straight forward name is fast losing it’s title as the SLC food truck scene’s best kept secret.  This truck is here to stay!

The straight forward approach they took with naming their business they took to building their sandwich.  You get four options.  The naked eye test upon first receiving my sandwich was basically “Yes this looks pretty straight forward and will probably taste pretty decent” but quickly becomes a “Holy #@$ this is an awesome sandwich”  When I think of Peruvian cuisine I think of a cevicheria or perhaps a plate of Papa a la Huancaína, I certainly don’t think of a sandwich.  Tell you what though.  The Peruvians apparently know how to make a mean sandwich, at least these guys do.

Perhaps what impressed me most of this food truck is how “made to order” they really are.  When I ordered the #4 or Lomo Saltado sandwich, I was expecting them to craft the sandwich by building it with pre-grilled steak, much like you see at a taco cart.  Instead what I heard and saw was them taking a ball of fresh red steak, slap in on the grill, and then add some fresh veggies along with it.  They grill these sandwiches up to order.

The steak was on point with this.  Tiny strips of steak, that were juicy and tender.  Just like you would want in a sandwich.  Each bite was easy to take and delicious.  One common trap with steak sandwiches is getting a big piece that is hard to chew and manage where you have to awkwardly bite into, and before you know it, the sandwich is destroyed.  Absolutely not a problem here.  To finish off the steak and peppers, they have a flavored aoili or mayo of some sort in there to balance things out.

Finally the bread was A+.  It was a basically a soft ciabatta style loaf that did a good job of staying chewy while soaking up the juices of the steak and mayo.  Sometimes you know a sandwich is going to be good from the moment you pick it up.  The way the bread felt in my hands as it was traveling up towards my mouth was awesome.

I didn’t get a chance to try this guy, but I took a quick snap after someone in line ordered it.  What I like about this one, is the small french fries mixed in with the veggies.  They looked nice and crisp and poised to give the sandwich some good texture.
